arhana herb or Turkish pickling herb, Echinophora sibthorpiana or Echinophora tenuifolia L. subsp. sibthorpiana (Guss.) Tutin(Turkish çörtük), is a herb sometimes used as a flavoring in tarhana and in pickles. It may also improve the fermentation of tarhana. (Deghirmencioghlu 2005)
