Κρίταμο – Κήρταμα – Crithmum maritimum L.

Το Crithmum maritimum L., γνωστό ως κρίταμο ή κήρταμα και στα αγγλικά ως rock samphire και sea fennel, είναι πολυετές, αρωματικό και σαρκώδες παράκτιο φυτό της οικογένειας Apiaceae. Αποτελεί χαρακτηριστικό είδος των βραχωδών ακτών της Κύπρου και είναι εξαιρετικά προσαρμοσμένο στην αλμύρα, στους ισχυρούς παράκτιους ανέμους, στον ψεκασμό του θαλασσινού νερού και στην ξηρασία.

Είναι ιθαγενές, μη ενδημικό είδος της κυπριακής χλωρίδας. Το Crithmum maritimum είναι επίσης το μοναδικό είδος του γένους Crithmum που απαντά αυτοφυές στην Κύπρο.

Ονομασία και ετυμολογία

Η επιστημονική ονομασία Crithmum maritimum L. δημοσιεύθηκε από τον Carl Linnaeus το 1753.

Η λέξη Crithmum προέρχεται από την αρχαία ελληνική ονομασία κρίθμον ή κρῆθμον. Η ακριβής ετυμολογία δεν είναι βέβαιη, αλλά έχει συσχετιστεί με τη λέξη κριθή, πιθανώς λόγω της ομοιότητας του καρπού με κόκκο κριθαριού.

Το λατινικό επίθετο maritimum σημαίνει «θαλάσσιο» ή «της θάλασσας» και αναφέρεται στον χαρακτηριστικά παράκτιο βιότοπο του φυτού.

Στα αγγλικά είναι ευρέως γνωστό ως rock samphire και sea fennel. Η ονομασία samphire χρησιμοποιείται και για άλλα, άσχετα μεταξύ τους, παράκτια φυτά και επομένως το rock samphire είναι ακριβέστερο όταν αναφερόμαστε στο Crithmum maritimum.

Περιγραφή

Το κρίταμο είναι πολυετές φυτό με ισχυρή βάση και πολυάριθμους διακλαδιζόμενους βλαστούς. Συνήθως σχηματίζει συμπαγείς θυσάνους πάνω σε βράχους, σχισμές και πετρώδεις παράκτιες θέσεις.

Μπορεί να φθάσει περίπου τα 60 εκατοστά σε ύψος. Ολόκληρο το φυτό έχει χαρακτηριστική σαρκώδη εμφάνιση, προσαρμογή που το βοηθά να επιβιώνει στο ιδιαίτερα σκληρό περιβάλλον των ακτών.

Τα φύλλα είναι παχιά, σαρκώδη, γλαυκοπράσινα έως πρασινογάλαζα και έντονα αρωματικά. Είναι διαιρεμένα σε στενά, γραμμοειδή έως λογχοειδή τμήματα και αποθηκεύουν νερό στους ιστούς τους.

Τα άνθη είναι μικρά, κιτρινοπράσινα έως πρασινοκίτρινα και σχηματίζουν τις χαρακτηριστικές σύνθετες σκιαδόμορφες ταξιανθίες της οικογένειας Apiaceae.

Οι καρποί είναι ωοειδείς έως επιμήκεις και καθώς ωριμάζουν αποκτούν διαφορετική απόχρωση από τα πράσινα νεαρά μέρη του φυτού.

Ανθοφορία

Στην Κύπρο η ανθοφορία του αρχίζει σχετικά αργά μέσα στο έτος. Σύμφωνα με το Flora of Cyprus, ανθίζει κυρίως από τον Ιούλιο μέχρι τον Νοέμβριο.

Η παρατεταμένη θερινή και φθινοπωρινή ανθοφορία είναι χαρακτηριστική του είδους στις κυπριακές παράκτιες συνθήκες.

Ενδιαίτημα και οικολογία

Το κρίταμο είναι κατεξοχήν παράκτιο αλόφυτο. Φύεται πολύ κοντά στη θάλασσα, πάνω σε παράκτιους βράχους, μέσα σε σχισμές πετρωμάτων, σε πετρώδεις ακτές και σε παραθαλάσσια εδάφη.

Είναι εξαιρετικά ανθεκτικό στις δύσκολες συνθήκες του θαλάσσιου περιβάλλοντος. Αντέχει στην υψηλή αλατότητα, στον συνεχή ψεκασμό από θαλασσινό νερό, στους δυνατούς ανέμους, στην έντονη ηλιακή ακτινοβολία και στην περιορισμένη διαθεσιμότητα γλυκού νερού.

Τα σαρκώδη φύλλα του αποτελούν σημαντική προσαρμογή σε αυτές τις συνθήκες, καθώς συμβάλλουν στην αποθήκευση νερού.

Το ισχυρό ριζικό του σύστημα επιτρέπει στο φυτό να εγκαθίσταται ακόμη και μέσα σε μικρές σχισμές βράχων, όπου υπάρχει ελάχιστο έδαφος.

Εξάπλωση στην Κύπρο

Το Crithmum maritimum είναι ευρέως διαδεδομένο στις ακτές της Κύπρου. Το Flora of Cyprus αναφέρει ότι συναντάται σχεδόν περιμετρικά του νησιού και ουσιαστικά σε όλες τις επαρχίες όπου υπάρχουν κατάλληλοι παράκτιοι βιότοποι.

Παρά την πολύ χαρακτηριστική σχέση του με τη θάλασσα, δεν περιορίζεται σε έναν μόνο τύπο ακτής. Μπορεί να εγκατασταθεί τόσο σε εκτεθειμένες βραχώδεις ακτές όσο και σε άλλες παράκτιες θέσεις όπου υπάρχει κατάλληλο υπόστρωμα.

Παγκόσμια εξάπλωση

Το κρίταμο έχει ευρεία φυσική εξάπλωση στις ακτές της Μεσογείου, της δυτικής Ευρώπης, της Μακαρονησίας και της περιοχής προς τον δυτικό Καύκασο.

Η φυσική του εξάπλωση περιλαμβάνει μεταξύ άλλων την Κύπρο, την Ελλάδα, την Κρήτη, τα νησιά του ανατολικού Αιγαίου, την Τουρκία, την Ιταλία, τη Γαλλία, την Ισπανία, την Πορτογαλία, τη Μεγάλη Βρετανία, την Ιρλανδία, τη βόρεια Αφρική, τα Κανάρια Νησιά, τις Αζόρες και τη Μαδέρα.

Η Κύπρος περιλαμβάνεται ρητά από το Plants of the World Online – Royal Botanic Gardens, Kew στη φυσική εξάπλωση του είδους.

Χρήσεις

Το κρίταμο είναι βρώσιμο άγριο φυτό με μακρά ιστορία χρήσης στη διατροφή των λαών των ευρωπαϊκών και μεσογειακών ακτών.

Τα νεαρά σαρκώδη φύλλα και οι τρυφεροί βλαστοί μπορούν να καταναλωθούν φρέσκα, να χρησιμοποιηθούν σε σαλάτες ή ως αρωματικό συνοδευτικό. Παραδοσιακά διατηρούνται επίσης σε άλμη ή ξίδι, πρακτική ιδιαίτερα γνωστή σε διάφορες μεσογειακές περιοχές.

Η χαρακτηριστική γεύση του είναι αλμυρή και έντονα αρωματική, κάτι που εξηγεί και την ονομασία sea fennel, παρόλο που δεν πρόκειται για το κοινό μάραθο.

Η χρήση του ως τρόφιμο είναι γνωστή από την αρχαιότητα και το φυτό εξακολουθεί να προσελκύει ενδιαφέρον στη σύγχρονη γαστρονομία.

Διατροφική αξία

Σύγχρονες επιστημονικές μελέτες δείχνουν ότι το κρίταμο παρουσιάζει ενδιαφέρον και από διατροφική άποψη.

Τα σαρκώδη φύλλα του περιέχουν ανόργανα στοιχεία και αποτελούν πηγή πολυακόρεστων λιπαρών οξέων, μεταξύ των οποίων ωμέγα-3 και ωμέγα-6. Το φυτό περιέχει επίσης πολυφαινόλες, καροτενοειδή, βιταμίνες, αιθέρια έλαια και άλλες βιοδραστικές ενώσεις.

Λόγω της φυσικής ανάπτυξής του σε αλατούχα περιβάλλοντα, έχει σχετικά υψηλή περιεκτικότητα σε νάτριο, ενώ έχουν επίσης καταγραφεί ασβέστιο, κάλιο, φώσφορος και άλλα μεταλλικά στοιχεία.

Για τον λόγο αυτό το Crithmum maritimum μελετάται σήμερα και ως πιθανό λειτουργικό τρόφιμο.

Παραδοσιακή φαρμακευτική χρήση και σύγχρονη έρευνα

Το κρίταμο έχει χρησιμοποιηθεί στην παραδοσιακή ιατρική από την αρχαιότητα. Στη βιβλιογραφία καταγράφονται παραδοσιακές χρήσεις ως διουρητικού, άφυσογόνου και ανθελμινθικού, ενώ υπάρχουν και παλαιότερες αναφορές για χρήση του κατά του σκορβούτου.

Σύγχρονες εργαστηριακές μελέτες έχουν δείξει ότι εκχυλίσματα και αιθέρια έλαια του φυτού παρουσιάζουν μεταξύ άλλων αντιοξειδωτική, αντιμικροβιακή και αντιφλεγμονώδη δράση.

Οι ιδιότητες αυτές αποτελούν αντικείμενο επιστημονικής έρευνας και δεν πρέπει να συγχέονται με αποδεδειγμένη κλινική αποτελεσματικότητα για θεραπεία ανθρώπινων ασθενειών, καθώς μεγάλο μέρος των διαθέσιμων αποτελεσμάτων προέρχεται ακόμη από εργαστηριακές μελέτες.

Ιστορική χρήση

Το κρίταμο ήταν τόσο περιζήτητο ως βρώσιμο παράκτιο φυτό ώστε σε ορισμένες περιοχές της Ευρώπης η συλλογή του αποτελούσε κάποτε επάγγελμα.

Η αρχική ανάρτηση του Biodiversity of Cyprus αναφέρει χαρακτηριστικά την ιστορική συλλογή του rock samphire από απόκρημνες θαλάσσιες ακτές της Βρετανίας. Τον 17ο αιώνα η επικίνδυνη αυτή εργασία έγινε γνωστή ακόμη και μέσα από αναφορά του William Shakespeare.

Κατά τον 19ο αιώνα το φυτό μεταφερόταν από το Isle of Wight προς την αγορά του Λονδίνου μέσα σε βαρέλια με θαλασσινό νερό, γεγονός που δείχνει την εμπορική αξία που είχε ως εποχικό τρόφιμο.

Προσαρμογή στην αλατότητα και μελλοντικές καλλιέργειες

Το Crithmum maritimum παρουσιάζει σήμερα ιδιαίτερο γεωργικό ενδιαφέρον επειδή μπορεί να αναπτύσσεται σε συνθήκες υψηλής αλατότητας όπου πολλά συμβατικά καλλιεργούμενα φυτά δυσκολεύονται να επιβιώσουν.

Για τον λόγο αυτό μελετάται ως πιθανή καλλιέργεια για βιότοπους και γεωργικές εκτάσεις με αλατούχα εδάφη, αλλά και ως νέο προϊόν για τη βιομηχανία τροφίμων.

Η φυσική του ανθεκτικότητα στην ξηρασία, στην αλατότητα και στις δύσκολες μεσογειακές συνθήκες το καθιστά ενδιαφέρον είδος για τη μελλοντική ανάπτυξη καλλιεργειών που απαιτούν λιγότερους πόρους γλυκού νερού.

Rock samphire – Sea fennel – Crithmum maritimum L.

Crithmum maritimum L., commonly known as rock samphire or sea fennel, and in Greek as kritamo (κρίταμο) or kirtama (κήρταμα), is a perennial aromatic and succulent coastal plant belonging to the family Apiaceae. It is a characteristic species of the rocky coasts of Cyprus and is remarkably well adapted to salinity, strong coastal winds, sea spray and drought.

It is a native, non-endemic component of the Cyprus flora and is the only species of the genus Crithmum occurring naturally in the wild in Cyprus.

Name and etymology

The scientific name Crithmum maritimum L. was published by Carl Linnaeus in 1753.

The generic name Crithmum derives from the Ancient Greek krithmon or krēthmon. Its exact etymology remains uncertain, although it has been associated with the Greek word for barley, possibly because of the resemblance of its fruit to a barley grain.

The Latin epithet maritimum means maritime or of the sea, referring directly to the plant's characteristic coastal habitat.

The established English common names include rock samphire and sea fennel. The term samphire is also applied to several unrelated coastal plants, making rock samphire a more precise vernacular name for Crithmum maritimum.

Description

Rock samphire is a perennial plant with a strong base and numerous branching stems. It commonly forms compact clumps on rocks, in crevices and in stony coastal habitats.

Plants may reach approximately 60 cm in height. The entire plant has a characteristic succulent appearance, an adaptation that helps it survive in the demanding coastal environment.

The leaves are thick, fleshy, glaucous-green to blue-green and strongly aromatic. They are divided into narrow linear to lanceolate segments and store water within their tissues.

The flowers are small, yellowish-green to greenish-yellow and are arranged in the characteristic compound umbels of the Apiaceae family.

Flowering

In Cyprus, flowering begins relatively late in the year. According to Flora of Cyprus, the flowering period extends mainly from July to November.

Habitat and ecology

Crithmum maritimum is a characteristic coastal halophyte, growing very close to the sea on maritime rocks, in rock crevices, on stony shores and in coastal soils.

It is highly tolerant of salt, sea spray, strong winds, intense sunlight and limited freshwater availability.

Its fleshy leaves and strong root system represent important adaptations that allow the species to survive in places where many other plants cannot become established.

Distribution in Cyprus

Crithmum maritimum is widespread along the coasts of Cyprus. Flora of Cyprus records it from almost all around the island and essentially from all districts where suitable maritime habitats occur.

The photographs presented in this post were taken at Yialousa on the Karpasia Peninsula on 1 October 2014.

Global distribution

Rock samphire has a broad native coastal distribution extending through the Mediterranean, western Europe and Macaronesia towards the western Caucasus.

Its native range includes Cyprus, Greece, Crete, the East Aegean Islands, Türkiye, Italy, France, Spain, Portugal, Great Britain, Ireland, North Africa, the Canary Islands, the Azores and Madeira, among other regions.

Cyprus is explicitly included within the native distribution of the species by Plants of the World Online, Royal Botanic Gardens, Kew.

Uses

Rock samphire is an edible wild plant with a long history of culinary use among coastal peoples of Europe and the Mediterranean.

Its young fleshy leaves and tender shoots can be eaten fresh, added to salads or used as an aromatic accompaniment. They have also traditionally been preserved in brine or vinegar.

The flavour is salty and strongly aromatic, characteristics that have made the plant attractive both in traditional cuisine and, increasingly, in modern gastronomy.

Nutritional value

Modern scientific research has demonstrated considerable nutritional interest in Crithmum maritimum.

Its succulent leaves contain minerals and polyunsaturated fatty acids, including omega-3 and omega-6 fatty acids. The plant also contains polyphenols, carotenoids, vitamins, essential oils and other bioactive compounds.

Because it naturally grows in saline environments, the plant contains relatively high concentrations of sodium, together with calcium, potassium, phosphorus and other nutritionally relevant minerals.

It is consequently receiving increasing attention as a potential functional food.

Traditional medicinal use and modern research

Rock samphire has a long history of use in traditional medicine. Historical and ethnobotanical literature records its use as a diuretic, carminative and anthelmintic, while older sources also mention its use in connection with scurvy.

Modern laboratory research has identified antioxidant, antimicrobial and anti-inflammatory activities in extracts and essential oils obtained from the plant.

These findings represent areas of scientific investigation and should not be interpreted as evidence that the plant is a clinically proven treatment for human disease, since much of the available evidence remains laboratory-based.

Historical use

Rock samphire was once sufficiently valued as a coastal vegetable that its collection became a specialised occupation in parts of Europe.

The original Biodiversity of Cyprus post records the historic harvesting of rock samphire from dangerous sea cliffs in Britain, a practice famously referred to by William Shakespeare in the seventeenth century.

During the nineteenth century it was transported from the Isle of Wight to London markets in barrels containing seawater, demonstrating its former commercial importance as a seasonal food.

Potential as a future crop

Crithmum maritimum is receiving increasing agricultural interest because of its ability to grow under saline conditions unsuitable for many conventional crops.

It is consequently being studied as a potential crop for saline and marginal agricultural environments, as well as a new product for the food and nutraceutical sectors.

Its natural tolerance of salinity, drought and harsh Mediterranean coastal conditions makes it particularly interesting in the search for crops that can be produced with reduced dependence on freshwater resources.
